Bulgur and Chickpea Salad
1 cup uncooked bulgur
1 1/2 cups boiling water
1 1/2 Tablespoons lemon juice
1 can chickpeas, drained and rinsed (or about 1 cup cooked)
1/2 cup chopped cucumber
1/2 cup chopped celery
1/2 cup diced red onion
1/2 cup crumbed feta cheese
1 teaspoon dried dill (or about 4 teaspoons fresh)
1/4 cup olive oil
Black pepper, to taste
Pour boiling water over bulgur in a large heat-proof bowl. Allow to sit about 15 minutes. Add other ingredients and stir to combine.
Chill for at least an hour or so.

Tastes almost too good to be as healthy as this has got to be. Also good with a big spoonful of bean salad, or on a bed of chopped lettuce. Would likely go very well with some tuna or chicken.

"One Hundred" Good Cookies from Let's Break Bread Together
(About 50 one ounce cookies)
1 cup margarine, softened
1 cup white sugar
1 cup brown sugar
1 cup vegetable oil
1 egg
1 cup crisp cereal like rice krispies, or 1 cup chopped walnuts
1 cup rolled oats
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cream of tartar
3 cups whole wheat flour.
Drop onto ungreased baking sheet and bake at 350F for about 12 minutes. Cool a couple of minutes before removing to rack to cool.

These are quite sweet and a bit high in fat, but they came out very light and crisp-chewy. I think they'll be awesome frozen one or two to a bag for lunches.

Modified from "Let's Break Bread Together"

Molasses Ginger Muffins
Sift together:
2c whole wheat flour
2c white flour
2 t salt
2 t soda
3 t ginger
1 t cloves (or part allspice)
Make a well in centre.
Place in a measuring cup:
2 T vegetable oil
Fill to 2 c with:
hot water
Fill to 4 c with:
Add liquids to dry ingredients. Bake at 375 F for 15 to 20 minutes.
Makes 24.

Wah! The bread machine broke. J only made 14 loaves this weekend.

I'm going to have to teach him to make bread the old-fashioned way, so here's the recipe for four loaves:

Bring to near boiling point:
4 cups water

Stir into
1/3 cup sugar
1/4 cup powdered skim milk
1 1/2 teaspoon salt
1/4 cup vegetable oil or hard margarine

Allow to cool to room temperature, then beat in:
6 cups whole wheat flour
3 teaspoons yeast

Stir in, mixing by hand at the end:
5 cups white flour

Knead until smooth, then turn into a large bowl. Cover and let rise until doubled in bulk.

Punch down and shape into four loaves.

Allow to rise again, and bake at 325F for about 15 minutes or until loaves sound hollow when tapped on the bottom.
