Started some sourdough yesterday:
Beat together until creamy:
2 cups warm water
1 Tablespoon yeast
2 cups flour
Leave out overnight covered loosely to work and poof and smell like fresh bread dough. For heaven's sake, don't use a metal container. A one gallon glass jar is more than large enough.
Today I added and beat in:
8 or so cups of whole wheat flour
about a half cup of sugar
a few scoops of powdered milk
enough water to make it look like lumpy pancake batter.
I left it to soften and raise a bit then put about two cups into a really clean mason jar that I stuck in the fridge.
To the rest I added
a couple of Tablespoons of salt
enough flour that it looked like bread dough.
Kneaded and left it to raise until poofy. Shaped into 5 loaf pan loaves and one huge flat loaf. Raised a bit more.
First loaf is now baking. Put into a cold oven then turned on to 350F. Should be done in about half an hour. (smells good!)
